Hi Betsy Here are my thoughts on the worde Andouille. I think it's okay to contract the And. Yes, it's a syllable division, but it doesn't break across a prefix or suffix. It's a minor or incidental syllable division. It does not hinder word recognition. See EBAE Rule X Section 34 A (2). Same as in the name Andrew. You contract the And there as well.
