Ivan,Go to the point in your project where you want to return the volume to the value that you had it set before you recorded the fade; then move to the volume column and reset it to that value. At that point, do a control-R to record an automation point that'll give you a snapshot of your settings. Make sure that Automation Write is on, of course, or you won't get this accomplished.
In regards to your tempo problem: Make sure that you've inserted your original tempo at the beginning of the project, which I'm assuming you've done that. Insert the new tempo at the beginning of the bar where you want it to occur with control-T. Don't use the "Insert Series of Tempos" unless you want to do just that.
