The cure for that is to do it over and over and over until you stop thinking
about it.  It's the recording artist's version of stage fright.

Actually, I don't have too much trouble with that unless, and this 
is the difficulty for me, I know I'm being recorded or listened 
to.  Knowing that adds just enough anxiety to the process to ensure 
a few screw-ups.
